While a wine is, by definition, dry when it contains less than 4 grams of sugar per litre, it doesn’t always taste dry. You’re more likely to think a wine is sweet when there is abundant fruit, honey, caramel, and other aromas which you would normally associate with a sweet taste – a phenomenon Cong calls associative sweetness. And did you know that high levels of acidity can reduce the perception of sweetness?

With an impressive career spanning multiple facets of the wine industry, Cong is listed 9th in the Harpers Top 50 UK Sommeliers. You may know her from Cambridge wine shop-bar Amphora, which was awarded the Decanter Retailer Awards Best Newcomer 2023.
